Cherokee Indian Meat Loaf

What you need
1/2 cup cornmeal
1/2 cup water
1/2 cup bacon fat
1 pound ground venison
1 can (17 ounces) whole kernel corn, drained
1 small onion, chopped
1 teaspoon salt
2 eggs

What you do
Place cornmeal in small bowl, add water and stir to mix. Set aside.
In skillet over medium high heat, melt fat and brown venison. Drain off excess fat. Reduce heat to medium and cook until meat is cooked through.
Add corn and onion. Cook 10 minutes. Add salt, eggs and cornmeal mixture. Stir well. Cook 15 minutes longer.
Place meat mixture in greased 9-inch by 5-inch loaf pan.
Bake at 350 degrees for 35-40 minutes. Makes 2 servings.
