Poor Man's Lobster

What you need
Sheepshead fillets
2 quarts boiling water
2 tablespoons salt

What to do
Drop fillets in boiling water and return to full boil. Allow fish to remain in water 3-4 minutes.
Remove with slotted spoon
Either dip fish pieces into melted butter, or pour butter over fish, sprinkled with salt and lemon juice.
Serve with boiled new potatoes, vegetable of your choice, pickle, coleslaw and rye bread.
